How to Prepare Curry
Step 1: Prepare the Bamboo Shoots
If you’re using fresh bamboo shoots, boil them in water for 15–20 minutes to remove bitterness. Discard the water and rinse once. If using canned or fermented bamboo shoots, rinse them under clean water before use.
Step 2: Cooking the bamboo shoots curry
1. Heat mustard oil in a kadhai or pan until it starts smoking slightly. Add cumin seeds and let them crackle.
